Obesity in the United States is increasingly cited as a major health problem. Results from the National Health and Nutrition Examination Survey show that the proportion of obese adults more than doubled, from 15% in 1971-1974 to 34% in 2003-2006 for adults aged 20 to 74. In 1990, obese adults made up less than 15 percent of the population in most U.S. states, but by 2010, 36 states had obesity rates of 25 percent or more and 12 of those states had a rate of obesity of 30 percent or more (CDCP 2012).Cutler et al. (2006) suggest that the increase in food consumption caused by falling food costs is the main cause of the rise in obesity since 1980. A study of the effects of prices on food choices shows that reduction strategies prices encourage the choice of targeted foods by lowering their cost. compared to alternative food choices (Jacobson and Brownell 2000). With the aim of promoting a healthy and balanced diet and reducing the incidence of diet-related health problems/diseases. The U.S. Department of Agriculture and Human Services jointly issues Dietary Guidelines for Americans every five years beginning in 1980 to provide targeted dietary recommendations (Wells and Buzby 2008). Reducing the percentage of Americans who are overweight or obese to meet public goals can influence agricultural production (Johansson and Brownell 2006). Although articles have been published on the dietary assessment of some major trends in food consumption in the United States, comparing the years between 1970 and 2005, the objective of this article is to identify food consumption through an analysis of trends over the past decade so that the information is useful for agribusinesses as well as individuals in the agricultural sector.
